VEGETABLE DALIYA KICHIDI:
Vegetable Daliya khichdi is a tasty savory made in less time and loaded with nutrients. It can be consumed either as a breakfast or a meal.
INGREDIENTS:
· Broken wheat - 1/2cup
· Moong dal - 1/2cup
· Ghee/clarified butter - 1tbsp
· Oil - 1tbsp
· Cumin seeds - 1tsp
· Assafatodie - 1pinch
· Ginger paste - 1/2tbsp
· Green chilies - 3
· Tomato - 1
· Green peas - 2tbsp
· Carrot - 1/2
· Turmeric - 1/2tsp
· Water - 4cups
· Salt - according to taste
INSTRUCTIONS:
1. Heat clarified butter on a thick bottomed pan.
2. Now, add the broken wheat and roast till it turns into golden brown.
3. In a pressure cooker heat oil and add cumin and Asafoetida.
4. To this add chilies and ginger paste, saute this for a min.
5. To the same pan add chopped tomatoes and cook them till soft and mushy.
6. Add the remaining vegetables and let it cook for 3 mins.
7. Later, add moong dal, water, turmeric, and salt to the pressure cooker.
8. Cover the lid and let it cook for 3 whistles.
Now, serve the vegetable Daliya khichdi with a small bowl of curd and some pickle.
LAPSI:
Lapsi is a popular sweet delicacy of Gujarat and Rajasthan. It is made mostly during festivals and special occasions. It is also known as Fada Lapsi, Lapsi halwa, sweet Daliya, or Gur ka Halwa. It is easy to make and very nutritious.
INGREDIENTS:
· Dalia (broken wheat) - 1cup
· Gur (jaggery) - 1/2cup
· Ghee (clarified butter) - 7tbsp
· Sliced dry fruits - according to taste
· Water - 1cup
INSTRUCTIONS:
1. Melt the ghee in a hot pan on medium flame.
2. Once, the ghee is melted add broken wheat and fry till it turns aromatic.
3. Add sliced dry fruits and saute them till golden brown.
4. Now, add water and cook till the ghee separates from the Daliya.
5. Later add jaggery and cook for another 7 mins.
When it is completely cooked serve it with ghee. It tastes best served hot.
